The city of Las Cruces is getting serious about nachos.

At next month’s “Noche De Nachos” at the Las Cruces Plaza, the city will attempt to break the Guinness Record for the World’s Largest Nachos.

It’s a title currently held in Lawrence, Kansas for a 4,689-pound heap of nachos.

That didn’t sit well with Jennifer Bales, the director of Visit Las Cruces, who said, “Las Cruces does so many things well…and we simply refuse to be bested at nachos.”

So, with the help of local organizations and businesses, the city is setting out to build a 5,000 pound nacho mountain.

“Noche De Nachos” is set for Nov. 10.
