El Paso, TX (KTSM) — Thanksgiving themed cupcakes
Pumpkin cupcakes with cinnamon cream cheese:
2 1/4 cups of all purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 cup softened butter unsalted
1 1/3 cup sugar
2 eggs beaten until frothy
1 can 15 oz pumpkin (not pumpkin pie)
3/4 cup milk
Preheat oven 350 degrees then fill cupcakes pan with liners.
Mix ingredients together then sift all dry ingredients together then slowly combine.
Fill liners with 1 1/2 tablespoon.
Bake for 18 minutes or until tooth pick comes out clean.
1 8 ounce cream cheese.
4 cups powder sugar
1 tablespoon vanilla extra pure
2 tablespoon ground cinnamon.
Mix ingredients on low speed
Gradually add 1 tablespoon of milk but just until you form peaks.
