"Whole Enchilada" is No Longer

For 31 years, Roberto Estrada used the same equipment to cook his record breaking enchilada. But like most things, the equipment has run its course.

That means no more of the 'world's largest, three layer, flat enchilada' at this year's Whole Enchilada Fiesta.

Estrada, the owner of Roberto's in Las Cruces says the equipment would cost at least 40-thousand dollars to replace. The equipment he has now would be too dangerous to cook with.

Festival organizers plan to replace the popular event with a enchilada eating contest.
