A new study shows that just minutes after you eat something salty, clear changes can be seen in your arteries.
Researchers found that foods rich in salt quickly impair the ability of blood vessels to widen-- that's even in people with normal blood pressure. The long-term effects of this are unknown.
Scientists suspect that the arteries are affected because the salt and fat may somehow block the release of nitric oxide.
The study can be found in this month's American Journal of Clinical Nutrition.
