El Paso's Environmental Services Department, local restaurant gear up for Earth Day
El Paso, TX (KTSM) — Earth Day may only be one day, but the City of El Paso is hoping to get a head-start and raise environmental awareness all month long starting with the celebration Saturday, April 5, 2014.
There's a way to go green with your food too, Romie Ruiz from Environmental Services and Jackie Cordova from the Green Ingredient, located at 201 E. Main St. in Downtown El Paso joined us in the studio Tuesday for a quick cooking demonstration.
Environmental Services will hold their Earth Day Celebration Saturday, April 5 from 10:00 a.m. to 3:00 p.m. at the Municipal Service Center located at 7968 San Paulo.
Below is the recipe Jackie shared with us on air, quick easy, and green! Enjoy, El Paso!
1 cup quinoa
1 ½ cups water
1.- Rinse quinoa well.
2.- Add the water to a sauce pan. Bring to a boil and add quinoa. Leave at low heat and cook for 15 – 20
minutes.. Until soft and fluffy.
Mexican Quinoa Salad
1 cup cooked quinoa
1 cup cooked beans
1 large tomato
½ onion, diced and soaked in lemon juice
2 tablespoons chopped cilantro
1 small bell pepper, diced
½ Peeled and diced cucumber
1 small jalapeño, minced
Salt to taste
1.- Add all ingredient in a bowl and mix well and serve.
