Expert: Authentic Mexican Cuisine is Healthful

EL PASO - Saturday, thousands of El Pasoans will celebrate Cinco de Mayo; while most people will do it with nachos, cheese and margaritas, experts say authentic Mexican cuisine is healthful.
Some chefs say we have "americanized" classic Mexican food, making it bad for us. Dieticians said authentic Mexican food is plant-based, with lots of tomatoes, onions, black beans and corn.
"We've dressed it up, we put cheese on it, we put queso on it, we fry things. and the original version has lost some of its luster,” said Roberta Anding, from Baylor's College of Medicine.
One popular Mexican dish-- guacamole, is a favorite. Avocados are high in heart-healthy fat, and help us absorb the antioxidants in tomatoes.
