Turkey Bolegnese

2 oz extra virgin olive oil
1 cup chopped onion
1 tbsp chopped garlic
½ cup finely diced carrot
½ cup finely diced celery
2 cups chopped tomato
8 oz cooked turkey
½ cup chopped fresh basil
salt and pepper
1 lb hot spaghetti
Freshly grated Romano Cheese

In a large frying pan over medium heat, heat the olive oil. 
Add the garlic and onion and stir just until the garlic starts to brown. 
Add the carrot, celery and tomato and cook for 5-8 minutes, just until the carrots are tender.  Add the turkey and cook until completely hot. 
Add the basil and salt and pepper to taste. 
Pour over hot spaghetti

Turkey Sandwich Italian Style

8 oz cooked turkey
2 Italian Ciabatta
1 oz extra virgin olive oil
2 oz balsamic vinaigrette
½ cup torn fresh basil
4 oz roasted red peppers
3 oz cranberry
½ oz Tabasco

Toss it all on the ciabatta bun.
