Rigatoni Isabella
3 oz margarine
1 cup chopped tomato
3 green onions, chopped
1 jalapeño, chopped if desired
salt
3 slices mozzarella
3 slices Swiss cheese
hot rigatoni noodles
In a medium frying pan over medium heat melt the margarine with the tomatoes, green onions, jalapeño, and sprinkle with salt. 
Cook for 4-5 minutes. 
Add the cheese, making sure to melt and cream it into the tomato mixture to a smooth consistency.  Add the rigatoni, mix well, and serve.

Linguine with cajun shrimp
3 oz margarine
1 1/2 tomatoes, chopped
3 oz chopped yellow onion
1 full teaspoon pepper
1/2 teaspoon oregano
4 squirts tabasco
1 teaspoon garlic
4 oz large shrimp
3 oz tomato sauce
3 oz water
Hot linguine
In a medium frying pan over medium heat melt the margarine with the tomatoes, onion, pepper, basil, oregano, tabasco, and garlic. 
Bring to a boil and simmer for 4-5 minutes. 
Add the shrimp and simmer for 2 minutes. 
Add the tomato sauce and water and simmer for 3-4 minutes. 
Serve over hot linguine.
