Cooking yummy food with Edward Davis

Italian Hummas

4 cups cannellili beans rinsed & drained
2 cloves garlic, (or more) roasted and minced
2 teaspoons fresh lemon juice
1 tsp crushed red pepper
¼ cup olive oil

Place all ingredients in food processor.  Blend to a smooth puree.
Serve with pita bread or toasted Italian bread slices

Linguini With Shrimp in Lemon Herb Sauce

4 oz extra virgin olive oil
1 lb medium shrimp, peeled and deveined
1/2 cup yellow onion, minced
1 tbsp minced garlic
2 oz white wine
1/4 cup chopped, fresh parsley
1 tbsp dried rosemary
1/2 cup shredded, fresh basil
12 oz Linguini, cooked al dente
2 tbsp lemon zest

In a large frying pan over medium heat, heat the olive oil with the onion and garlic.  Saute for 1-2 minutes until the garlic starts to brown and the onion turns clear.  Add the shrimp and cook for 3-4 minutes.  Deglaze the pan with white wine.  Add the parsley, basil, rosemary and lemon zest.   Bring back to a boil.  Remove from heat and pour over hot pasta.  Top with freshly grated cheese. 
Serves 6-8 first courses or 3-4 main courses
