Class Title:  Breakfast 102

Instructor: Chef Rudy Valdes of Crave Kitchen & Bar
Class Time: 9a-10a
Chef Valdes will demonstrate some of the dishes that have earned Crave the "best bet for good food" award and the "best breakfast" award from the readers of ‘What's Up’ magazine. The class will cover topics like the specific equipment needed to prepare breakfast, traditional breakfast sweet breads like pancakes and waffles and several menu items straight from the crave menu that you will be able to make at home, and how to brew the perfect cup of coffee. Note: Chef Valdez recommends to take both breakfast classes because he will be discussing techniques and equipment in the Breakfast 102 class that will be used in the Christmas class.

Instructor: Javier, Danny, Tony, and Jerry Garcia of Quintero’s Meat Company
Class Times: 10:00a-11:15a
With over 150 years of combined experience in the meat industry, the brother who own Quintero’s Meat Company know more about meat preparation than almost anyone. This is the class any grilling enthusiast cannot miss. Learn new and classic techniques of gas and charcoal grilling that will make your grill skills the talk of the neighborhood.


Class Title:  Christmas Breakfast
Instructor: Chef Rudy Valdes of Crave Kitchen & Bar

The traditional breakfast gets a bit of an upgrade for this special occasion. Chef Rudy Valdes will demonstrate classic brunch items that will make this special morning even better, sip on home-made eggnog while the kids open their presents, then sit down to smoked salmon benedicts with dill hollandaise sauce and for the young ones some pumpkin stuffed french toast. And if some unexpected guests stop by we'll show you how to turn some of those Christmas eve leftovers into something special. Chef Diego Amigo is returning to Lets Cook El Paso as one of the area’s most popular chefs. Known for his great tasting récipes and easy-to-follow teaching style, this class will provide you with some fantastic ideas for your kitchen just in time for the Holidays. Some of the dishes covered will be: Roasted Butternut Squash Soup, Southwest Chicken topped with Cheese and a poblano cream sauce served with roasted green chile and corn mashed potatoes and seasonal vegetables, and Diegos special Sopapillas.

Chef Mark Spelman is recognized by the International Restaurant and Hospitality Rating Bureau as one of the Best Chef’s in America and has earned an array of achievements too long to list here. This is a rare opportunity to experience an class with not only one of the World’s best chefs, but a master teaching chef. Chef Spelman’s description of the class: “Modern and Classic Italian. A fast paced class that will be exciting and very informative with some amazing food and some fun surprises”.

Instructors: The State Line BBQ Owner Operator Skeeter Miller with Managers Mike Shahan and Kevin McGuire
Class Times: 3:00p-4:15p
Skeeter Miller is one of the area’s top BBQ and grilling experts. He was a featured speaker at The Texas Hill Country Wine and Food Festival and has taught cooking classes at Central Market, Rice’s Epicurean Market (Houston) and The Houston Culinary Guild. Miller has been in numerous local and International publications and was recently featured on ShopNBC and the Food Network. Skeeter and his crew will tantalize your grilling desires with a comprehensive class that covers Grilled Pepper stuffed Pork loin / Grilled Yellow Squash Bisque / and Skeeter’s “Hell Yeah Ancho Butter Sauce, and more!.


Class Title:   Small Bites with South American Flair
Instructor:   Chef David Dean of SSID (formerly of El Paso Country Club)
Class Time: 3:15p-4:15p
Enjoy the energetic and comedic style of Chef David Dean as he shows you how to prepare sweet and savory appetizers utilizing South American flavor profiles. These delightful bites will add another dimension to your holiday entertaining. We will be preparing Venezuelan Chocolate mousse in a mini phyllo cup, Camarones en Escabeche on crostini, and a Peruvian Ceviche in a tortilla cup.

Chef Bowden will wow you with his spiced pumpkin mascarpone tart and almond pumpkin Florentines. You’ll learn many of the secrets pastry chefs use to develop edible works of art. Rolling, forming, filling, and more. Each student receives a thorough recipe packet that includes detailed formulas for each component of these two pastries for a total of 8 recipes. You’ll also enjoy petit four size tartlets made for each attendee to taste and the Florentines that are prepared will be finished and handed out during class.

Learn all about high end beer with Adrian Perez, one of El Paso’s beer experts.  Adrian provides a solid introduction to the beer universe, starting with the history of beer, brewing ingredients and processes. He explores the classic styles of beers, the crazy and delicious recreation by some of today’s top brewers. Adrian will share tips on how to pour a beer, figure out which kind beer you prefer and pairing beer with food. His goal is to share the tools necessary for each participant to discover their own personal favorite beer.  Enhance your knowledge of beer and enjoy sampling some of the fines beers.
