EL PASO- A Kern Place bakery store has cupcakes that are bursting with flavor and it's not what you're used to seeing or tasting.
We're talking everything from Tres Leches, to bubble gum, to tequila. Although these may sound strange, the cupcakes have slowly started to win over people's taste buds. "You can go anywhere to get a regular cupcake, but you need a little imagination to make it a bit special," said owner and pastry chef Marcy Rangel.
In a nutshell, Baby Cakes by Marcy in Kern Place has cupcakes in every flavor you can possibly imagine.
"The little ones with the black flower are avocado and cheese. This one's a key lime pie. This one's a Guinness bacon cupcake," said Marcy, pointing out the different cupcakes sitting on a dish on the counter.
Rangel has built her bakery business with such creative cupcakes as caramel popcorn, pumpkin pie cheesecake, tequila, horchata, champagne, and the list goes on and on. She says her latest concoction really takes the cake. "Peanut butter cheesecake with potato chip crust. It sounds weird but it's really good," said Marcy.
Believing that may be hard to swallow, but Marcy’s used to dealing with skepticism. "Most people say it's pretty gross, but the curiosity gets the best of them and they decide to take on a crazy one like the avocado or the Guinness bacon," said Marcy.
You could say some people wind up eating their words once they take a bite. Coming up with these tasty treats takes longer than with regular cupcakes because Marcy has to test out different methods to get the recipe just right. "You have to infuse things into them. Sometimes, like the avocado is not something that typically gets baked so you have to play around and make sure the consistency works," said Marcy.
Sometimes, things don't quite turn out the way she wants them to. "Tamarindo is not very good in a cupcake," said Marcy. "Tomato also not very good in a cupcake."
Marcy says she tries to come up with one new flavor per week, but as you heard, some of them don't quite make the cut and make it to the display case. So how does she decide which cupcakes rise to the occasion? "The main criteria is if my 6-year-old likes it, then it's gonna be good," said Marcy.
Eventually when she runs out of new cupcakes, Marcy says she may go another route. "Spaghetti with meat sauce in a cupcake. There's also meatloaf with mashed potatoes or a salmon cake cupcake, so whatever you want to put in foil, bake it. The sky's the limit," said Marcy.
Baby Cakes by Marcy is located at 2601 N. Stanton Street. They're open Tuesday through Friday from 11:00 a.m. to 6:00 p.m. and Saturdays from 11:00 a.m. to 4:00 p.m.
